1 cup chana dal (split Bengal gram)
1 cup jaggery, grated
1 cup wheat flour
2 tablespoons ghee (clarified butter)
A pinch of turmeric powder
A pinch of salt
Water, as needed
Ghee, for frying

Rinse the chana dal thoroughly and soak it in water for about 2-3 hours.
Drain the soaked dal and cook it in a pressure cooker with enough water until it becomes soft and easily mashable.
Once the dal is cooked, drain any excess water and transfer it to a pan.
Add grated jaggery to the cooked dal and cook on medium heat, stirring continuously until the mixture thickens and forms a smooth consistency.
Add a pinch of turmeric powder and mix well. Take the pan off the heat and allow it to cool down.
For the dough:

In a mixing bowl, combine wheat flour, a pinch of salt, and 2 tablespoons of ghee.
Gradually add water and knead the mixture to form a soft and smooth dough. Allow the dough to rest undisturbed for a duration of 15 to 20 minutes.
Assembling and Cooking:

Divide the dough and filling into equal-sized portions.
Take one portion of dough and flatten it into a small disc. Place one portion of the filling in the center and bring the edges of the dough together to seal it completely.

Roll out the filled dough gently into a flatbread, dusting it with flour as needed to prevent sticking.
Heat a griddle or tawa on medium heat and cook the Puran Poli on both sides until golden brown, applying ghee on each side.
Proceed with the same process for the remaining dough and filling.
Serve warm Puran Poli with a drizzle of ghee and enjoy the delightful flavors of this traditional Maharashtrian sweet.
